The Chef's Page
Norman Carmichael & Leo Ruth
We are finally into the interesting, and hot, days of the summer. Fresh produce is becoming abundant locally and our new patio is the place to enjoy it. Imagine sitting on the patio, eating a cold calamari salad and sipping a refreshing white wine while the world goes by. In the next few weeks, as more and more variety is available to us expect one or more of the following dishes:
Salade Niciose - Two of my favorite ingredients, Bonito del Norte (Spain’s incomparable tuna fish) and locally grown fresh tomatoes (you know, tomatoes that actually taste like tomatoes) are the basis of this salad, which was so very popular last summer.
Calamari Salad - Very popular last year. Eating it is like being on a beach in Spain.
Green salad variations - using a basis of locally grown baby greens, we try and match them with what is fresh and fun in the market on a given week. Some variations will include:
Poached pear and jamón Serrano
Couscous with tomatoes, green onions, feta and raisins
Chickpea and fresh tomato
Salt cod and white bean (trust me on this one)
Soups coming up:
Gazpacho - again
Strawberry and fennel gazpacho (very refreshing)
Watermelon and tomato
Melon soup with ginger and sweet chili sauce
Our specials may include:
Sashimi-grade tuna, marinated and served with intriguing vegetable and fruit combinations
Crab Cakes with Chardonnay sauce
Shrimp Pancakes
Pork or beef kebabs
And, finally, some desserts that may appear:
Grandma Carmichael’s fresh fruit cobbler
Apples stuffed with Crema Catalana
Greek yogurt with blackberries and balsamic vinegar
Flan
Hope this whets your appetites. Along with our traditional everyday menu, we are always on the lookout for fun, new combinations. We also welcome suggestions on bringing back some of your past favorites that may not appear here. Let us hear from you.
